Food with Friends:Buffalo Chip Cookies



As you know by now, we are DIE-HARD Houston Texans fans! 
 

 
 
Today is NFL Draft day which is considered a holiday at our house.
 
 
In honor of such an occasion, I am making Billy Joe's favorite cookies and
getting all our Texans gear on! 
 
 
Buffalo Chip Cookies
 
2 cups sugar                                  
2 cups brown sugar
 2 cups melted butter                    
4 eggs
 2 tsp. vanilla                                
4 cups sifted flour
2 tsp. baking soda                          
2 tsp. baking powder
1 tsp. salt                                    
2 cups oatmeal
2 cups Post toasties, crushed        
2 cups nuts, pecans or walnuts
1 large package chocolate chips   
1 small can Angel flake coconut (optional)
 
 
Mix in a large pan or pot.  Drop by tablespoons or ice cream scoop (I actually use my coffee scoop) on greased cookie sheet.  Bake at 350° for 12 minutes.
 

(All mixed up in a stock pot.)
 
(Just put them in the oven.)
 

(Oh yeah!  I know you want a bite!)
 
 
The girls and I are busily cooking up fajitas and homemade queso for our 2014 Draft party!  What is your menu?
